Peach Cobbler Muffins

Full disclosure: I added 1/4 tsp salt because a recipe without salt is bizarre to me. I don't know if it made any difference. I also added 1/4 cup chopped pecans, because mmm, pecans. I used thawed, frozen peaches. Results: Very moist and fluffy and delicious! Will definitely make again and freeze some for easy breakfasts.


Peach Cobbler Muffins

Ingredients
For the muffins:
1 1/4 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup white sugar
2 cups chopped fresh (or canned) peaches
1/2 cup whole milk
1 egg
1/4 cup vegetable oil
For the streusel topping:
1/4 cup all purpose flour
1/4 cup white sugar
1 pinch cinnamon
3 tablespoons cold unsalted butter

Instructions
For the muffins:

  1. Preheat your oven to 350 degrees Fahrenheit and prepare a large muffin tin with 8 muffin cups.
  2. Add the flour, baking powder, salt and sugar to a large bowl and whisk together to combine.
