GINGERBREAD COOKIES

Wonderful! Super easy recipe. The dough has great texture and is fun to work with. I substituted shortening for the lard. I made the recipe in the morning while making breakfast for the kids and stuck it in the fridge until later that day. My kids LOVE these cookies because they aren't TOO spicy.


GINGERBREAD COOKIES

INGREDIENTS:
3 1/4 cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground ginger
3/4 teaspoon baking soda
3/4 teaspoon ground cloves
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup (1 1/2 sticks) unsalted butter, softened to room temperature
1/2 cup packed dark-brown sugar
1 large egg
1/2 cup unsulfured molasses
optional toppings: simple icing (see below), red hots, sprinkles, etc.
SIMPLE ICING RECIPE:
2 cups powdered sugar
2-3 Tablespoons milk
1/4 teaspoon vanilla extract

DIRECTIONS:

  1. In a large mixing bowl, whisk together flour, cinnamon, ginger, baking soda, cloves, salt and nutmeg. Set aside.
  2. In an electric mixer fitted with the paddle attachment, beat the butter and sugar together for 2 minutes on medium-high speed until light and fluffy.  Add in eggs and molasses, and beat on medium speed until combined. Reduce mixer speed to low, and gradually add the flour mixture until just combined.
