As I was trying to decide what I wanted to do for Valentine’s Day this year, my fabulous daughter suggested that we make a Valentine Fruit Pizza. We love fruit pizza, so of course we had to give it a try… and heart shaped…it couldn’t get any better!
Ingredients:
Crust:
1/4 cup butter, softened
1/2 cup sugar
1 egg
1/2 tsp. vanilla
1 1/4 cups flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
Filling:
4 oz. cream cheese, softened
1/4 cup powdered sugar
1 cup whipped topping (I used Cool Whip)
Fruit Topping:
I used raspberries, blueberries, and blackberries, but you can use whatever types of fruit you like.
Glaze:
1/4 cup sugar
2 tsp. cornstarch
1/4 cup water
1/8 cup lemon juice
For crust: Cream butter and sugar together. Add in egg and vanilla, mix. Add flour baking powder, baking soda, and salt, mix. Press dough into heart shape onto a greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until golden brown. Cool completely.
